10 Questions with Mat, our new Head Chef

1. What made you become a chef?

From an early age I was always helping out in the kitchen with my Mum and Nan for our family dinners. I started out with some basic Veg and Fruit prep but soon began learning more elaborate recipes and acquiring new skills. I also quickly learnt how to bake, open Oysters and flip Crepes, and once middle school finished and it was time to choose a career, it was crystal clear that catering was going to be my path.

2. If you’re having a dinner party at home, what do you cook?

Depending on the time of the year, I love BBQs in the Summer and home smoking in the Winter. I also love to experiment with Superfood Salads and Stews as well as Ramen, Japanese, Vietnamese, and of course French classics… it all depends on what I can get my hands on and what mood I’m in.

 3. If you got your dream job tomorrow, what would you be doing?

Luckily for me I already have my dream job, cooking for our guests.

4. Any kitchen annoyances?

Waste, carelessness, lack of common sense, messiness and a dirty environment!

5. What’s your embarrassing chef moment?

I really can’t think of anything worth telling.

6. What words of wisdom would you give any young chef starting out?

Open your eyes, look carefully, take notes and practice.

7. What attracted you to The Fleece?

I always loved coming to the Fleece as a guest, it’s always a great atmosphere and Witney is a lovely market town. I enjoy new challenges, and being here makes it even more enjoyable.

8. Anything you won’t eat?

I can’t stand fast food places such as McDonalds and Burger King… I also try avoiding Indian foods as I didn’t grow up eating it and I’m not too keen on overly spicy food. I also avoid a few ingredients such as Cauliflower and Broccoli. They just aren’t my taste.

9. What’s your biggest achievement?

Training the youngsters. It’s great to see them develop their calling for cooking and giving them direction and a sense of achievement.

10. And what makes you stay at Peach?

They are the best employers I’ve ever had… it’s that simple.
